Abstract

This research concerns the history of the school lunch program and dining service. Lunches began to be served in the 1800's in the European countries. It started in 1853 in the United States through the start of the penny-lunch program. There have been a tremendous amount of changes in how lunches were to be served using USDA bulletins and RDA requirements. The cost and locations of the school lunch programs were factors of determining whether or not the program was to succeed and be where it is today.I have gathered a great deal of information about this program and how it relates to dining service through interviews, conversations, questionnaires and the computer. Dining history consists of information about Ball State's Residence Hall Dining Service and colleges and universities.
